Grilled Veggie Couscous Salad

This is a combination of grilled veggies with some fresh tomato, fresh herbs and a yummy apple vinaigrette. It’s always good to combine some cooked veggies with some raw for extra flavor and texture.


2 cups couscous- cook according to package

3 zucchini- cleaned and cut in half length wise

3 squash- cleaned and cut in half length wise

1/2 onion- slice thick

10 mushroooms- clean and leave whole

1 head of radicchio- cut into quarters leaving core intact.

1 cup of grape tomatoes cut in half

Kale- cut into thin strips

fresh basil

fresh parsley

Toss veggies, except tomato, in EVOO and some sea salt. Grill until limp, remove and drizzle some balsamic.

Cut all veggies and toss with cooled couscous. Add dressing, and season with fresh herbs, and kale.

Add Dressing- I made up a dressing with apples, apple cider vinegar, olive oil, tabasco, salt and pepper, garlic, and blended it all in the Vitamix. Good Luck!!
